This is my most favorite desert (Dutch Apple Cake)!
Recipe for Dutch Apple Cake
Ingredients
Crust
1 c. Butter
4 c. Sifted Flour
2 c. Sugar
1 tsp. Vanilla
1 Egg (beaten)
1 tsp. Baking Powder
Dash of Salt
Filling
4-5 Large Pippin Apples
1-1/2 c. Raisins
2-3 tsp. Cinnamon
1/4 c. Sugar
Glaze
1 egg yolk
Apricot Jam
Directions
Crust
Combine dry ingredients, cut in butter (not softened).
Add egg and vanilla. Work with hands until mixed. Chill in refrigerator for 1/2 hour.
Roll out 1/4 dough for bottom of cake; 1/2 dough for sides; 1/4 dough for top (save)
Filling
Fill with layers of apple, raisins, and cinnamon sugar.
Put top on in woven strips and close side pieces over top.
Glaze
Brush with slightly watered egg yolk
Bake at 350 for 1 to 1-1/2 hours.
Remove from oven and while still warm, brush with jam (preferably apricot).
** Dutch way is to reduce cinnamon sugar to syrup for final glazing.
