Dutch Apple Cake

This is my most favorite desert (Dutch Apple Cake)!

Recipe for Dutch Apple Cake

Ingredients

  • Crust

    • 1 c. Butter

    • 4 c. Sifted Flour

    • 2 c. Sugar

    • 1 tsp. Vanilla

    • 1 Egg (beaten)

    • 1 tsp. Baking Powder

    • Dash of Salt

  • Filling

    • 4-5 Large Pippin Apples

    • 1-1/2 c. Raisins

    • 2-3 tsp. Cinnamon

    • 1/4 c. Sugar

  • Glaze

    • 1 egg yolk

  • Apricot Jam


Dutch Apple Cake

Directions

  • Crust

    1. Combine dry ingredients, cut in butter (not softened).

    2. Add egg and vanilla. Work with hands until mixed. Chill in refrigerator for 1/2 hour.

    3. Roll out 1/4 dough for bottom of cake; 1/2 dough for sides; 1/4 dough for top (save)

  • Filling

    1. Fill with layers of apple, raisins, and cinnamon sugar.

    2. Put top on in woven strips and close side pieces over top.

  • Glaze

    1. Brush with slightly watered egg yolk

  • Bake at 350 for 1 to 1-1/2 hours.

  • Remove from oven and while still warm, brush with jam (preferably apricot).


** Dutch way is to reduce cinnamon sugar to syrup for final glazing.
