Baking is something I have always enjoyed. I have always baked with the kids in my life, my kids, grandkids, nieces, nephews, and friend's kids, and this is the recipe they always want to bake. We always double it so there is enough for everyone.
Recipe for Peanut Butter Toffee Cookies
Ingredients
1 ½ C firmly packed light brown sugar
¾ C creamy peanut butter
½ C unsalted butter softened to room temperature
3 T milk
1 ½ T vanilla
1 egg
2 C flour
¾ tsp baking soda
¾ tsp salt
1 bag of toffee bits
Directions
Preheat oven to 375 degrees
Combine the brown sugar, peanut butter, butter, milk, and vanilla in a large bowl.
Beat at medium speed with a mixer until creamy.
Add the egg and beat just enough to blend it.
Combine the flour, baking soda, and salt.
Hand mix in the dry ingredients.
Once combined, add the toffee bits.
Drop by rounded tablespoons onto an ungreased baking sheet, and flatten slightly with a fork.
Bake for 7-8 minutes until set and just beginning to brown. Do not overbake.
Cool on the sheet for 2 minutes and then transfer to a cooling rack.
** Makes about 3 dozen cookies.
