Ridiculous Ribs

This is the revenge recipe.  My mom created this recipe, and my dad loved it.  My parents divorced and several years later I asked my mom for it so I could give it to Dad’s wife.  My mom said I could have it and cook it for Dad but to never, ever, never give it to the new wife.  My dad would try various means to get the recipe but never did.  He attempted to replicate it several times and never quite got it, the variations were yummy though.  It wound up becoming a family joke and hence the name we gave them, ridiculous ribs.

Recipe for Ridiculous Ribs

Ingredients

  • 2 Racks of Pork Ribs, I prefer St Louis or Baby Back Style

  • ¾ C Light Karo Syrup

  • ½ C Soy Sauce

  • ½ C Brown Sugar

  • ½ C White Sugar

  • ¼ C White Vinegar (keep it around, you may want more)

  • 1 small can of pineapple chunks

  • Garlic Powder

  • Dash of cayenne pepper


Directions

  1. Remove the silver skin and then cut the ribs into single rib pieces. 

  2. In a small amount of oil brown each side.  I use a large electric skillet for this recipe. 

  3. While the ribs are browning, in a medium-sized bowl combine the Karo, soy, brown sugar, white sugar, white vinegar, the juice from the canned pineapple, and as much garlic powder as you like.  My family loves garlic, I use about a tablespoon, if yours doesn't use a teaspoon. 

  4. Mix well. 

  5. Now that the ribs are brown, and in the skillet, slowly pour the sauce over the ribs. Turn the ribs to coat all sides.

  6. Bring to a boil and then turn the heat down to a simmer. 

  7. Continue to turn the ribs until the sauce is reduced, sticks to the ribs and the meat of the ribs starts to pull back from the bones. 

  8. Add the pineapple chunks and incorporate them into the sauce.

 

** I serve these with seasoned rice (a secret family recipe) and a fresh green salad.
